The S.Pellegrino World’s 50 Best Restaurants list, organised by Restaurant magazine, is an annual snapshot of the opinions and experiences of over 800 international restaurant industry experts. The winners were presented yesterday and the Danish restaurant Noma has stayed in the number one spot for a second year in a row. Last year Noma rose to number one after beating out elBulli, a Spanish restaurant that had held the title for four years in a row. The awards, which began in 2002, are regarded as the leading barometer of international food trends.
Rene Redzepi, Noma’s 33 year old head chef, was proud but not particularly surprised. His menus consist of an update of the traditional Nordic kitchen. David Report visited Noma last spring and had a nice experience, this particular evening with a lot of cucumber dishes. The cooking is experimental with very little salt and spices, so be prepared for a very “clean” experience. Natural growing herbs and weed are important parts of the concept.
The interior decoration is made by Danish architects Signe Bindslev Henriksen, and Peter Bundgaard Rützou from Space.
